💭 Frequently Asked Questions

Here are some questions (and answers!) readers often ask about this Ruth’s Chris Steakhouse butter recipe.

What kind of butter do steakhouses use?

Restaurants like Ruth's Chris Steakhouse often serve compound butter. It's just softened butter with a variety of herbs and spices.

Why do chefs put butter on steak?

There are two reasons that chefs add butter to steak. First, it's delicious. The richness of butter compliments the meat. Second, butter can make a steak more tender, especially if the steak is charred on the outside.

⭐ Tips

✔️ Start with room temperature butter. Never microwave the butter.

✔️ Fresh herbs are best. While dried can be substituted, fresh will lend more flavor.

✔️ Keep butter tightly wrapped or in an airtight container. Unfortunately, butter will take on odors that might be in your fridge and it will change the flavor of the compound butter.

Storage

To Store: Keep this compound butter in an airtight container in the refrigerator for 1 week.

To Freeze: Place the butter into a resealable freezer bag. Label and store for up to 3 months.

To Thaw: Thaw overnight in the fridge.

(These are my favorite airtight containers.)

📖Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

  • If you're making this to go with seafood, add a little bit of lemon zest and/or lemon juice to the butter mixture.
  • Instead of parsley, substitute green onions or other fresh herbs.
