This bowl of steel cut oats with maple fried bananas is the perfect warming and cozy breakfast recipe! You’ll love the combination of cinnamon, maple, bananas, and almond butter!

Alright. Your morning oatmeal is about to get a complete makeover.

Seriously, I could eat these steel cut oats with maple fried bananas for dessert.

At the moment there’s nothing I love to start my day with more than a big bowl of warming oats. Lately, I’ve been making steel cut oats (as opposed to quick oats) in the morning.

At the beginning of the year, I was really loving smoothies in the morning, like my favorite green smoothie or a veggie-packed smoothie. But now, I’m on a total oatmeal binge!

Steel cut oats are made by cutting the whole oat 2-3 times, into smaller pieces. Because they are less processed than quick oats or rolled oats, they digest slower. (So they have a lower glycemic index, and keep you full longer, win!)

Steel cut oats have a ton of nutritionalbenefits.

One difference you’ll notice about steel cut oats compared to quick oats or rolled oats is the cooking time. Steel cut oats take 10-15 minutes to cook. Yes, it’s a bit longer…BUT the taste and texture of these oats aresoworth it!

You can also prepare your steel cut oats in advance. Simply prepare a pot of them the evening before, and store them in an air-tight container in the fridge. Then when it’s time for breakfast, just heat them up in a pot or in the microwave.

The bananas only take 5 minutes to prepare. So you can turn this into a super quick easy breakfast recipe to enjoy at home, or even to take on the go.

Description

This bowl of steel cut oats with maple fried bananas is the perfect warming and cozy breakfast recipe!

Ingredients

oatmeal

  • 1 1/2 cups water
  • 1/2 cup steel cut oats (gluten-free if needed)
  • 1/4 cup almond milk (or other plant-based milk)
  • 1/4 tsp cinnamon

Instructions

  1. Bring 1 1/2 cups of water to a boil in a pot. Add the oats, reduce heat to low and cover and let simmer for 12-15 minutes. (*May vary depending on your oats, check your packaging for directions)
  2. Remove from heat and stir in the almond milk and cinnamon.
  3. While the oats are cooking, heat the coconut oil in a small skillet on medium-high heat. Add the maple syrup and salt, and then place the bananas in the pan.
  4. Let cook on each side for 2-3 minutes, until caramelized and tender.
  5. Pour the oatmeal into a bowl and top with the maple fried bananas.
  6. Next add the almond butter, hazelnuts, hemp seeds, cinnamon, and maple syrup on top.
  7. Serve immediately.
