I plantedbeets one year in my vegetable garden. I love these brilliant, beautiful, earthy vegetables with a passion, and had high hopes of harvesting fresh beets all summer long. The experience was not a complete disaster, but also not quite what I envisioned. While I did get armfuls of beet greens, wonderful to toss into a stir-fried side or salad or dal, the beets themselves grew no larger than marbles.

I haven't tried my hand at growing beets since, but I do buy them ever so often, especially when I can get fresh, organic beets and greens at the market. In spring, it's that much easier.

I had a bunch of beautiful golden beets on hand after my last trip to the market, and, the other night, looking for something easy but delicious to make with them, I created this recipe for Roasted Golden Beets with Rosemary and Garlic.

Beets take beautifully to herbs, and they combine easily and naturally with garlic, which tones down as well as enhances their earthy flavor. (Try this utterly simple dish of beets with garlic and olive oil, another one of my beloved recipes to see just how well garlic and beets pair together).

In this roasted beets recipe it's rather wonderful how the roasting concentrates the sweetness of the beets. The recipe itself is very simple, requiring just four ingredients (and the salt and pepper, of course).

What are you planting in your vegetable garden this year? I just got started with mine, and with my hands as full as they are, I am sticking to the easy ones-- a few tomatoes, herbs, eggplant, zucchini, and peppers. Here's looking forward to a bountiful summer of fresh, homegrown vegetables. And if you've ever grown beets, I'd love to know your secret.

Hi! This recipe is the best ever, full of flavour, nice and crisp. However was wondering do we preserve all vitamins and minerals when we roast vegetables?

    • Vaishali

Joyce, so happy to hear you enjoyed it! Cooking does reduce nutrients in almost any vegetable, but it's not a huge difference and one can only eat so much beet slaw. 🙂 I like my beets cooked rather than raw because that also concentrates the earthy flavor into a mellow sweetness.

I want to cook these at the same time I am cooking a beef brisket at 300 degrees. I am trying to figure out when to put the beets in the oven during the brisket's "low and slow" approximately 5 hour cooking time.
How long do you think they will take at that lower temperature?

    Reply

    • Vaishali

Prob one hour and 15 minutes at that temperature.

We got golden beets in our CSA box. I had never cooked golden beets before. I used fresh rosemary from my 1st time herb garden. Yum! This recipe was easy and delicious!

Hi! I'm so excited to try this! I have a few giant yellow beets so if I cut up two of those instead, it should work right? Also, could I add a couple small red beets for color... do they cook the same?

Thank you for taking the time to help ☺️

    Reply

    • Vaishali

Yes, beets of any color and size would work here!

Have you tried this recipe with cooked beets? or frozen beets?

    Reply

    • Vaishali

It won’t work with beets that are already cooked— they’ll burn. Frozen could work.

What does 6 inch beets mean? Is it 6 beets or one large beet?

    Reply

    • Vaishali

It's 6 medium-sized beets, cut into 1-inch chunks. Some of the words got moved around when I moved to a new recipe editor--I've corrected now.

Thank you for the recipe! It sounds very delicious but I have a question. Can it be made oil-free?

    Reply

    • Vaishali

You can sub the oil with 1/4 cup of vegetable stock. Your beets may not turn out as crunchy, but they'll be tasty!

FAQs

Why do golden beets turn black after cooking? ›

True to their name, golden beets have a red skin, a beautiful bright yellow-gold inside and are super sweet and tender. A note on oxidation: Gold beets turn brown when they start to oxidize. The skin is a protective layer and once that is removed, or once the beet is sliced, oxidation begins.

Are golden beets healthier than red beets? ›

Golden best vs red beets in terms of health benefits is essentially a tie, they have almost the exact same health benefits! The only one that would win in terms of health benefits would be red beets. Red beets have a higher antioxidant content based on their deep red colour, meaning they're rich in anthocyanin.

Why not peel beets before roasting? ›

No need to peel before or after baking. The skin, which is perfectly edible, just seems to disappear during the baking process. The trick to pan-roasted beets is to drop the temperature a bit. I always roast potatoes, Brussels sprouts, carrots, and pretty much all the other veggies at 425 degrees Fahrenheit.

Are roasted beets better than boiled? ›

My favorite way to cook beets is to roast them, which gives a sweeter, richer, and deeper flavor than boiling does. Another advantage is that they don't bleed as much, especially if they're roasted whole.

Can you eat golden beet skin? ›

(Some people are happy to leave the skins on; they are fine to eat.)

What is the black stuff in beets? ›

Boron deficiency causes the development of internal black spots. Necrotic areas occur at random in the root or at the surface where disease organisms may enter causing a canker to develop.

How many times a week should I eat beets? ›

The oxalates found in beets can increase your uric acid level, meaning that too many beets can lead to gout. To avoid this, stick to no more than a single half-cup serving of beets per day.

Are beets good or bad for your liver? ›

Beetroot. Chock-full of antioxidants and nitrates, beetroot has earned its stripes as a potent weapon for heart health, blood pressure, cognition, and inflammation. But when it comes to liver health, this resplendently red root also serves as a natural blood cleanser, purging your body of toxins and heavy metals.

Are golden beets anti-inflammatory? ›

Golden beets contain betalains, which have anti-inflammatory properties. This makes them beneficial for individuals dealing with inflammatory conditions. The high vitamin C content in golden beets is crucial for a robust immune system, helping the body fight off infections and illnesses.

Why are roasted beets bitter? ›

One of the reasons for this is that beets can absorb a lot of minerals from the soil in which they're grown, giving them an earthy and sometimes sweet or bitter flavor, depending on how they're cooked. Beets are delicious roasted, grilled, microwaved, steamed, boiled or air-fried.

How do you keep beets from bleeding when roasting? ›

Whatever the cooking method, you can minimize bleeding by not peeling the skin and by not slicing off the tops of the beets. Peeling after cooking is simple; the skin slips right off with a paper towel.

Can you roast beets without aluminum foil? ›

You can use any variety of beets to make this recipe. Save time, and effort and reduce waste by skipping wrapping them in foil. Roast them on a baking pan or parchment paper. They peel easily, but to avoid staining hands I recommend using gloves.

Are roasted beets anti-inflammatory? ›

Beets contain pigments called betalains, which possess a number of anti-inflammatory properties ( 8 , 17 , 18 ). This could benefit several aspects of health, as chronic inflammation has been associated with conditions like obesity, heart disease, liver disease, and cancer ( 19 ).

Are oven roasted beets good for you? ›

While it may seem like a good idea to have beets daily because of their benefits, you may need to exercise caution when eating them. Eating beets or drinking beet juice may lead to kidney stones, a potential food allergy, or stool or urine color changes.

Do beets lose color when cooked? ›

Boiling produces tender beets with a less intense flavor. It also pulls a great deal of color from the root vegetables into the hot water. That's OK for flavor but be mindful that the color of the beet may change a bit in the process.

Do beets change color when cooked? ›

Beetroot contains betalains a class of pigments that are not stable to heat, light, acidity, and oxidants but betalains upon heating changes color to yellowish, not bluish.

Why is my beetroot black? ›

I might be missing something that I can't see in the photos but it looks to be that the black that you are seeing is actually oxidation which is quite common with beets and often happens near the top of a ferment — where the oxygen is.

How do you keep beets from browning? ›

Beets should be stored unwashed, with 2 inches of their stem attached to avoid color bleed, and can remain refrigerated in a plastic bag for up to 2 weeks.
