Today weare sharing our secret to throwing a quick easy Crock Pot BBQ Chicken together. It is great to use in salads and for sandwiches. We are also including our favorite summer salad recipe to make with it!
Cris here. At the time that I am writing this Indiana is finally warming up and getting nice out AND that has me in the mood for all things summery. Now I realize you may be reading this in summer time or in the dead of winter but I have to share all about our favorite trick to get yummy quick, easy crock pot bbq chicken for all our favorite dishes– be it a simple sandwich or a decked out salad full of all the flavorful veggies I am finding in the grocery store lately.

Ingredients for Quick Easy Crock Pot BBQ Chicken
2.5 Cups Cooked and Shredded Chicken
3/4 Cup Favorite BBQ Sauce
2 teaspoons Poultry Seasoning
How to Make BBQ Chicken in a Slow Cooker
Place ingredients in a small slow cooker and stir.
Cook on low for 2-3 hours until barbecue sauce caramelizes and meat is heated through

- Now you can whip this chicken up in numerous ways depending on what kind of chicken you decide to start with… You will need to choose one of the following forms of chicken for theserecipes:
- 2.5 cups of our Crock Pot Shredded Chicken, Crock Pot Butter Chicken or Electric Pressure Cooker Shredded Chicken
- A grocery store rotisserie chicken or our Crock Pot Whole Chicken. (You will need to remove skin and bones and shred chicken)
- 20 oz Bag Frozen Cooked Shredded or Pulled Chicken from grocery store
- You can cook this up with raw chicken breasts (2-3) to begin with, you will just need to cook your meat longer and shred once the meat is tender. However, I like to start with cooked chicken so the sauce caramelizes over all the shreds of meat, instead of just on the outside of the uncooked meat.
- I used a small slow cooker to cook this up. If you are using a slow cooker larger than 4 qt you will want to double the recipe or reduce your cooking time as you see fit with your crock pot. Curious about our slow cookers? Here is a list of the ones we use.
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
- All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

BBQ Chicken Summer Salad Recipe

This is our favorite go-to salad when the veggies at the grocery store start looking like they have that summer flavor… you know what I’m talking about, right? This salad has all the flavor of a backyard bbq and is a great way to get the family to eat their greens!
Ingredients for BBQ Chicken Summer Salad
1 Bag Salad Greens- We use Spring Mix usually
1 Large Tomato- Diced
2 Boiled Eggs- Sliced
2 Corn Cobs- Cooked and cut off the Cob
1 Cup Shredded Cheese
2.5 Cups Crock Pot BBQ Chicken
Garnish- BBQ Sauce Ranch Dressing, Optional-Bacon Crumbles
How to Make BBQ Chicken Summer Salad
Pour greens into a large bowl.
Top with remaining ingredients, except garnish
Toss well and top with garnish
